Job description
To assist in the implementation of new food service products and to participate in Hot Food Departments continuous product and process improvement.
Responsibilities
Should have a thorough knowledge of International Cuisine.
Follow standard recipes and techniques for food preparation and presentation which help to assure consistently high quality.
Evaluate statistics on Sales/Wastage/GP of the current products as well as the New Products Developed.
Regularly update the Group Operations Manager on the departmental performance and take feedback for improvement.
Create menus for individual shops based on the Customer Demographic around the shop.
Visit stores and check for product availability, consistency, quality, and submit the store visit reports.
Participate in New Store Openings- Co-ordinate with department head on menu, staff requirements, ingredient, overhead ordering. Check equipment list against the order and report if any discrepancy.
Ensure that safe working practices and procedures are implemented and adhered to in accordance with LULU policies for employees.
Creates learning and development opportunities for self and others across functions and departments.
Qualifications
Bachelor's degree or related culinary degree
Minimum of 10 years' experience in the culinary field out of which minimum 3 years in equivalent position.
Ability to develop himself / herself in the current role and beyond.
Willing to take on responsibility and able to delegate tasks efficiently.
Previous experience in high volume a la carte fine dining and / or banqueting in a large kitchen.
Demonstrate ability to create and manage simple project plans.
